- 4 lbs beef short ribs
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 bottle (750 ml) red wine (preferably Cabernet Sauvignon)
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Cooking Instructions
- Preheat Your Oven: Preheat your oven to 325°F (165°C) to prepare for the slow braising process.
- Sear the Ribs: In a large Dutch oven, heat the olive oil over medium-high heat. Season the short ribs generously with salt and pepper. Sear the ribs on all sides until browned, about 4-5 minutes per side. Remove and set aside.
- Sauté the Vegetables: In the same pot, add the onions, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened and aromatic. Stir in the garlic and cook for an additional minute.

- Oven Cooking: Cover the Dutch oven and transfer it to the preheated oven. Bake for 2.5 hours, until the short ribs are tender and falling off the bone.
